Six Years in the Making
We have been making natural, minimal-intervention wine in Temecula since 2020 — pouring at the PAMEC Patio in Old Town while the estate vineyard matured. This year, the full winery and tasting room opens in wine country. It is the first dedicated natural wine estate in the valley.
No additives. No commercial yeasts. No fining agents. Just grapes, time, and a clear philosophy about what wine should be.
What Makes PAMEC Different From Other New Wineries in Temecula
Temecula has seen a lot of new openings in recent years. Most follow the same playbook: resort-style tasting room, big production, wines made to please everyone. There is nothing wrong with that. But it is not what we do.
PAMEC makes wine the old way — wild fermentation, no additives, minimal sulfites — using Southern California grapes grown in conditions that reward patience. The lineup includes Cabernet Franc, Sangiovese, Chardonnay, and the Amber Vermentino, our skin-contact orange wine that has become the bottle people come back for.
