Something has been growing quietly on a hillside in Temecula wine country. This year, it opens.
PAMEC Winery is opening its full estate winery and tasting room on our vineyard in Temecula Valley — a milestone six years in the making. For the first time, guests will be able to experience our natural wines where they come from: the vineyard itself.
Where We Started
We have been making natural, minimal-intervention wine in Temecula since 2020. Our tasting room has always been the PAMEC Patio in Old Town — an outdoor wine bar where guests could taste what we were building. That space gave us a community, a reputation, and six years of learning what Temecula terroir is truly capable of.
The estate winery is the next chapter.
What the Estate Winery Means
Our estate vineyard sits in Temecula wine country — the valley that produces some of Southern California’s most interesting terroir. The combination of warm days, cool nights, and well-drained soils creates conditions that reward minimal intervention. Let the vineyard do the work, and the wine reflects where it came from.
The estate will include a dedicated tasting room, outdoor terrace, and event space. Wine tasting will happen in the place where the wine is made — surrounded by the vines, with the views that Temecula wine country is known for.
Our Wines
Everything we make follows the same principle: no additives, no commercial yeasts, no fining agents, minimal sulfites. The lineup includes Cabernet Franc, Sangiovese, Chardonnay, and our Amber Vermentino — a skin-contact orange wine that has become our signature bottle. We also release limited seasonal wines throughout the year.
Natural wine is not a trend for us. It is the only way we know how to make it.
In the Meantime
While the estate winery prepares to open, the PAMEC Patio in Old Town Temecula is where you can find us. Open Thursday through Sunday. No reservation required.
