A real wine bar starts with people who care about what’s in the glass. Not just labels or price points, but what happened in the vineyard, how the grapes were farmed, what the winemaker was thinking when they made it. That context makes the wine taste different. Better.
At PAMEC, we only pour our own wines — natural, minimal-intervention bottles made from Southern California grapes. No commercial yeasts. No additives. No manipulation. What’s in your glass is what came out of the ground.
Our staff knows every bottle. They can tell you which vineyard the Cabernet Franc came from, why we harvest early, what “skin contact” actually means for the Amber Vermentino. If you want that conversation, you’ll get it. If you just want a great glass, you’ll get that too.
The Vibe
PAMEC Patio is outdoor, relaxed, and unpretentious. We’re on Old Town Front St — walking distance from everything — with fire pits, good music, and a pace that actually lets you slow down. No TV screens. No sports ticker. Just wine and conversation.
It’s the kind of place you come for a glass and stay for the bottle. We hear that a lot.
What We Pour
The lineup rotates with what we’re making, but you can usually find:
- Cabernet Franc — earthy, lifted, honest. Drinks well on its own or alongside food.
- Sangiovese — Old World variety, California grown. Food-friendly and real.
- Amber Vermentino — our skin-contact orange wine. If you’ve never had one, start here.
- Chardonnay — clean, no butter, no nonsense. The way Chardonnay should be.
- Seasonal limited releases — these change. Ask what’s open.
