People ask us why Temecula. Sometimes with genuine curiosity, sometimes with a hint of skepticism — as if the valley is only known for the big estates and the party buses. We take that question seriously.

The Terroir Is Real

Temecula Valley sits at roughly 1,500 feet elevation in the Santa Ana Mountains, with a marine influence that pulls cool air through the Rainbow Gap from the Pacific every evening. The days are warm enough to ripen Mediterranean varieties. The nights are cold enough to preserve acidity. The soils are decomposed granite — well-draining, low in nutrients, the kind that forces roots deep and produces grapes with concentration rather than volume.

This is good ground for natural wine. Not despite its challenges, but because of them.

Nobody Else Was Doing This

When we started making natural wine in Temecula in 2020, the valley was known for sweet wines, large estates, and conventional winemaking. The natural wine movement had taken hold in Los Angeles, San Diego, and Northern California — but not here.

That gap was the opportunity. A valley with real terroir, an Argentinian winemaking heritage that valued restraint and expression over manipulation, and a growing market of visitors looking for something beyond the tourist circuit. We built PAMEC to fill that space.

Six Years Later

The PAMEC Patio in Old Town Temecula gave us our community. The wine club — the Cork Collector — gives us our most committed customers. The estate vineyard gave us the fruit. Now the estate winery gives us the place to bring it all together.

When the winery opens in 2026, guests will taste natural wine in the place it was grown. That is not something you can do at many wineries anywhere in California, let alone in Temecula.

While the estate winery is being finished, the PAMEC Patio is open Thursday through Sunday in Old Town Temecula. No reservation required. The Cork Collector wine club ships quarterly to members across California — the best way to follow what we are making between visits.
